Restaurateur Firok Shield is well known among locals and visitors as a charming and hospitable host. He has operated several acclaimed Carmel restaurants but now concentrates his efforts exclusively at Carmel's Bistro Giovanni. He holds a very Zen-like attitude toward his business. "I don't think you can truly own anything in life," he says. "I am the caretaker of this restaurant while I'm here. And I take good care of it."

It's the full-flavor Italian and Mediterranean cuisine, unpretentious and attentive service plus the eatery's casual, inviting ambience. Gorgeous murals line the earth-toned walls, creating the feel of an ancient Mediterranean villa.

"Some of my staff has been with me for 20 years," Firok says. "They are truly genuine in wanting to take care of our guests. Chef Fernando has been here for 16 years." Fernando's kitchen turns out dishes with just the right amount of indulgence combined with hearty nutrition, including slow-roasted short ribs, certified Angus steaks, lamb and authentic pastas. There's a full bar and a reasonably priced wine list that includes Firok's own Block 57 and Da Giovanni labels.
